German Potato Salad
The only potato salad I have ever absolutely loved was my mom's German potato salad. It's been a long time favorite and still is. The only change I make to the recipe is that my mother puts in 1/4 teaspoon of celery seed, but I've never been fond of it so I leave it out. I also tend to use red potatoes and leave the skins on. But those are only small little changes
Ingredients
4 medium potatoes, cooked, cooled, (peeled), and sliced (I use unpeeled reds)
4 slices bacon, uncooked
6 green onions, sliced
2 Tablespoons sugar
1 Tablespoon flour
1 teaspoon salt
1 teaspoon or one cube of beef bouillon
1/4 teaspoon celery seed (I omit this)
Dash of pepper
1/2 cup water
1/4 cup white vinegar
Directions
- Fry the bacon until crisp. Set aside to cool and crumble
- Reserve 3 tablespoons bacon drippings in pan
- Cook green onions in drippings until tender
- Add sugar, flour, salt, bouillon, (celery seed), and pepper
- Blend until smooth
- Add water and vinegar. Cook until bubbly
- Mix with potatoes and bacon and heat through
- Serve immediately. Store leftovers in fridge.
