Garlic Chicken Pizza

Years ago, my mother had a favorite pizza at a restaurant, but when they stopped making it, she created her version of it. Since then, this recipe has become a family favorite. I often make it when we have company over and it's usually the first to disappear. Now, this recipe does call for Miracle Whip and I would highly recommend NOT substituting Mayo for it as it will completely remove the creamy, tangy flavor and not offer the same flavor at all.

Garlic Chicken Pizza

Ingredients:
1 pizza crust--prepared mix or already cooked
1-2 boneless skinless chicken breasts
Garlic marinade
1 onion, sliced or diced (I usually dice it for ease of cutting the pizza)
2-4 green onions, sliced
Thinly sliced or diced tomatoes (I like using diced canned tomatoes)
Olive or vegetable oil
Garlic powder
1/2 cup parmesan/romano cheese
1/2 cup Miracle Whip
Mozzarella Cheese
Dried Parsley

Directions: 
  • Pierce chicken with fork and marinade a few hours or overnight for more flavor.
  • Grill or broil chicken until done, then dice and set aside.
  • Brush pizza crust with oil and sprinkle generously with garlic powder.
  • Mix Miracle Whip and Parmesan/Romano cheese together and spread across crust.
  • Top with tomato, sauteed onion, and diced chicken.
  • Add cheese, parsley, and green onion.
  • Bake at 425° until time stated on crust instructions or until cheese is bubbly and browned.
